Decoyise Brown, our 2011 Coconut Cake Challenge winner, shared her techniques and tips for baking her winning coconut cake at Macy’s Home in Bethesda, MD (Saturday, December 10, 2011). Eatonville Restaurant‘s Executive Chef Oji Jaja and Pastry Chef Gregoria Contreras provided the baking logistics including breaking open a fresh coconut with a few knocks around the crown with a hammer. (The winning coconut cake is featured on Eatonville’s dessert menu. Eatonville bakes 25 coconut cakes a week for their restaurant diners.) Cake enthusiasts got new ideas and coconut cake to taste.
